NOTE: Another option to consider is doing the trail in segments; that is, rather than trying to ride the entire trail continuously in 5-7 days, go to a town on the route; secure lodging, and ride the trail in both directions from that location, and take in some of the Spur and Connector Trails that will take you to other points-of-interest not always on the main trail...and give you more time to photograph and enjoy the sights in the area.  Then go back to the Motel and take a warm shower and have a good dinner.  Maybe spend several days in that area.  Then, at another time, go to a different town and do the same.  You will eventually have seen the entire trail, and more, without the grueling consecutive day trek..
